The water temperature should be about 75 to 85℃. Never use boiling water in 100℃, as Longjing tea is not fermented, so the tie guan yin tea itself is very tender. If you use hot water to brew, the tea would be a bad roll, and it will result in bitter taste. So how do you control the temperature of it? Of course, we don’t get the thermometer to amount the water, so it’s better to pour the boiling water into an intermediate cup, and then pour it into Chazhong(a kind of cup, containing tea), so you can easily control the water temperature.
Anther point to keep in mind, that is, the high rush and low down. Because high rush can increase the size of the water column exposed to air, bringing about efficient cooling effect. If you have no immediate plans of brewing the poured tea, you should open the lid of Chazhong, not closed. As for the quantity, the dragon well tea is just enough to cover the end of Chazhong. What’s more, the brewing time is to increase with the times of brewing. Chinese tea culture has no fixed formula, and we don’t only enjoy the tea soup, but also enjoy the process of brewing.
