Interpretation of the tea elements

1.    Caffeine (the higher quality, the higher quantity)

People find caffeine from coffee in 1820, but it is found from tea in 1827.

It is almost on the time dragon well tea leaves are sprouting that caffeine is formed. The first and second leaves after sprouting have the highest caffeine; comparatively, the later sprouting, the less caffeine.

3.    Amino acid: produce sweet taste

Protein in tie guan yin tea leaves becomes sediment combined with tannin, and then it will curdle after being heated. Comparatively, amino acid is water soluble, so it appears in the hot tea water. In conclusion, amino acid is a key to the tastes of tea.

4.    Chlorophyll: determine the different varieties

The color of the tea leaves is formed by chlorophyll, erythrophyll, xanthophylls, anthocyanidin, etc.

5.    Leaf alcohol: the maker of fragrance

We pay much attention to the aroma from tea, and the special light scent from new tea is made from leaf alcohol. The controller of the scent is volatile balmy vegetable oil, but even little. Although, the origin of the fragrance is variable, the most important one is the alcohol sort, because it is easy to volatilize. So if it’s summer or hot temperature, the aroma will disappear soon. It’s best to store the tea in refrigerator to keep 5 Celsius degrees.

6.    Vitamin C: the newer the tea, the more quantity

Vitamin C is an essential segment to prevent scurvy. Generally speaking, vitamin C can’t stand for high temperature, so hot water may destroy it. As a result, there is only 80% vitamin C at the first time, and 10% less at the second time.

7.    Inorganic content: to keep body weak alkali

If we burn the tea leaves out, 5~6% inorganic content will leave behind in the ashes, and 50% is potassium, 15% is phosphoric acid, and the else are lime, magnesium, iron, manganese, soda, sulfuric acid, sodium and iodine. What’s more, the quantity of manganese and iodine are the highest. If we are in healthy content, our body blood is stay weak alkali. While eating meet and wine will turn it acid, drinking tea can restore our internal environment.
